We buy the bestselling hand mixers and put them through our tough tests to see how well they whisk and mix. We don't accept freebies from product manufacturers or retailers.

We regularly revisit the hand mixers on sale to see if there are any more popular models that need testing, and when we find them, we do.

How well they mix

We use the following attachments on each hand mixer and time how long it takes for each mixture to come together:

  • Beaters We use these to make a sponge cake batter, timing how long each mixer takes to incorporate flour and eggs after creaming the butter and sugar.
  • Whisk We use this attachment (or the beaters, where no whisk is supplied) to whisk egg whites to stiff peaks.

Ease of use

  • We assess how easy it is to fix and remove the different attachments.
  • We rate how easy it is to set and adjust the speed controls.
  • Because you're holding a hand mixer for the whole job, we pay close attention to how comfortable each one is to hold – its weight, balance and handle shape.

What's the difference between a hand mixer, stand mixer and hand blender?

A hand mixer and a stand mixer

If you're a regular baker but short on counter space, a hand mixer will whip, whisk and mix batters and egg whites – and some models with dough hooks included can knead too.

A stand mixer does the same jobs hands-free: clamp on the bowl, choose your attachment and let it do the hard work while you get on with something else. It's the better choice for big batches and bread dough, but you'll need somewhere to keep it. See our guide to the best stand mixers for baking.

For liquid blends such as soups, sauces and smoothies, or tougher tasks such as crushing ice, a hand blender or jug blender is your best bet, as the blades can cope with these heavy-duty tasks.

Hand mixer attachments explained

The whisks of a hand mixer

Most hand mixers will come with these standard attachments:

  • Beaters The most common attachment, used for combining any mixture with a normal to heavy consistency – cakes, biscuits, icing and even mashed potato.
  • Balloon whisks Best for whisking egg whites, whipping cream and light batters. The whisks incorporate much more air into the mix, but shouldn't be used for heavy mixtures, as they could get damaged.

Some additional accessories are available with certain models:

  • Dough hooks Spiral hooks for kneading bread and pizza dough – worth looking out for if you bake bread but don't want a stand mixer.
  • Blender and chopper attachments Some models, such as the Ninja Foodi 3-in-1 we tested, convert into a hand blender or mini chopper for soups, sauces, nuts and herbs.

Are hand mixer attachments universal?

No, hand mixer attachments are made to fit the machine they come with. Some attachments fit different models from the same brand, but you'll need to check with the manufacturer.

What is a hand mixer good for?

The standard attachments on a hand mixer can help you with a variety of baking tasks:

  • Cake The beaters will take you through all the stages of making a cake. Increase the speed to cream butter and sugar together and lower the speed to fold in flour.
  • Whipped cream or meringue Use the balloon whisks on a high speed to whip air into double cream for whipped cream, or into egg whites and sugar for meringue.
  • Pastry and biscuits The beaters can bring together shortcrust pastry and biscuit doughs in a fraction of the time it takes by hand.
