What are the symptoms of salmonella food poisoning?

Salmonella is a bacterium which causes food poisoning. It can come from raw meat, undercooked poultry, eggs and unpasteurised milk, in addition to seafood.

Symptoms of food poisoning include:

  • nausea
  • diarrhoea
  • stomach cramps
  • vomiting
  • a high temperature of 38C or above
  • feeling generally unwell: feeling tired and having aches and chills, for example

The NHS says that symptoms usually develop within a few days of eating the contaminated food. However, sometimes symptoms can develop within just a few hours. Or - surprisingly - symptoms might take as long as a few weeks to show.

If you contract food poisoning, the NHS advises that the most important thing is to have lots of fluids to avoid dehydration. You should avoid fizzy drinks and fruit juice, though, as these can exacerbate diarrhoea.

Most people should be able to recover from home and symptoms will pass within a week. There is only a small risk of severe illness and the need for hospital care.
